Sometimes you just want that great little cheesecake dessert but you want to put as little work into as possible. You don’t want to fire up the oven and bake a long time, then chill it for a long time. You just want that sweetness that is my favorite dessert EVER but you want it a lot easier. Well this No Bake Rainbow Cheesecake is literally just that. I got all the awesomeness I love in a cheesecake and I don’t have to do half of the work lol. Add into it that this isn’t a plain a plain cheesecake this is a cheesecake with a freakin’ fruity pebbles rainbow crust! You know you are gonna be making this literally all the time.

No Bake Rainbow Cheesecake Recipe
Ingredients
- 10 oz. Marshmallows
- 3 Tbsp. Butter
- 6 Cups Fruity Pebbles
- 16 oz. Cream Cheese
- 2 tsp. Lemon Juice
- 2 Cups Heavy Cream
- 1 tsp. Vanilla
- 1/3 Cup Sugar
Instructions
- In large bowl, combine marshmallows and butter. Microwave for 2 minutes and stir.
- Add Fruity Pebbles to melted marshmallow mix and press into the bottom of a spring form pan. Set in fridge until ready to use.
- In large bowl, blend the cream cheese and lemon juice until combined.
- Add heavy cream, vanilla, and sugar and mix until smooth and silky.
- Pour the cream cheese mixture on top of the Fruity Pebble crust, using a spatula to create a smooth top.
- Chill for 3 hours.
