Guinness Cheese Dip with Pretzels – A St. Paddy’s Day Classic!
Ingredients
- 1/2 Cup White Cheddar Shredded
- 1/2 Cup Mozzarella Shredded
- 1 Cup Gruyere Shredded
- 1/4 Cup Milk
- 8 oz. Cream Cheese Softened
- 1 Tbsp. Dijon
- 2 Tbsp. Green Onion Diced
- 1 Garlic Clove Diced
- 1/3 Cup Guinness
- Salt
- 1 (16.3 oz.) Can Buiscuits
- 2 Tbsp. Baking Soda
- 1 Egg
Instructions
- 🔥 Preheat & Get That Flavor Going – Set your oven to 350°F. In a medium pot, heat olive oil over low heat and cook the garlic until fragrant. Pour in the milk and Guinness, bring everything to a simmer, then stir in cream cheese until it starts melting.
- 🧀 Melt That Cheesy Goodness – Stir in ¼ cup cheddar, mozzarella, Gruyere, and Dijon. Whisk until smooth and creamy, then taste for salt and adjust if needed.
- 🥨 Make the Pretzel Bites – Take your biscuits, cut them in half, and pinch them into small dough balls.
- ♨️ Give Them That Pretzel Magic! – In a small saucepan, bring 2 cups of water and baking soda to a boil, then reduce to a simmer. Drop in the biscuit dough balls in batches, let them puff up for about 60 seconds, then scoop them out and place them around the edge of a 10-12” skillet or baking dish.
- 🖌 Egg Wash & Cheese Topping – Brush the pretzels with egg wash, sprinkle with coarse salt, and pour the cheese dip into the center of the skillet. Sprinkle on the remaining ¼ cup cheddar.
- 🔥 Bake to Perfection – Pop it in the oven and bake for 32-35 minutes, or until the pretzels are golden brown and the dip is bubbling.
- 🌿 Garnish & Serve! – Sprinkle with chopped green onion, grab a pretzel, and dive into cheesy, beer-infused heaven!
