Doritos Chicken Casserole

Today’s recipe is one of those “Oh Screw it let’s just have some fun!” type of dinner recipes. I mean come on it’s a Doritos Chicken Casserole… Yes you read that right lol Doritos Chicken Casserole! Come you know just as well as I do if you tell the kids you are having Doritos for dinner that will SWARM it and kill this one. It helps that it freaking tastes awesome too! I love a good dinner casserole like this one. Super easy to make, serves plenty of people and it tastes so freaking good. It is no wonder that a lot of times the casserole is the go to dinner for the parent on the go. So go ahead and give this one a try I know you will fall in love with it!

Doritos Chicken Casserole

Ingredients
  

  • 4 Chicken Breasts Cooked and Chopped
  • 10 oz. Can Cream of Chicken Soup
  • 16 oz. Refried Beans
  • 4 Cups Colby Jack Cheese Shredded
  • 1/2 Cup Milk
  • 2/3 Cup Sour Cream
  • 1 Can Ro-Tel Tomatoes
  • 110 z. Bag Nacho Cheese Doritos Crushed
  • 1/2 Pckg. Taco Seasoning
  • Optional Toppings
  • Tomatoes Chopped
  • Shredded Lettuce
  • Sour Cream
  • Black Olives
  • Jalapenos Diced

Instructions
 

  • Preheat over to 350 degrees.
  • In large bowl combine the soup, milk, sour cream , Ro-Tel, about half of the cheese, taco seasoning and cooked chicken.
  • In a 9×13 layer casserole as follow; Refried Beans, 1/3 of Doritos, 1/2 Chicken Mixture, 1/3 of the Doritos, 1/2 of Chicken Mixture, Rest of Cheese, Rest of Doritos.
  • Cover with Aluminum Foil and bake for 30-35 minutes, uncover and bake for 5 more minutes.
  • Top with any toppings you want and serve.
