First guys I want to say sorry I am late on this one. I know it’s supposed to be out on Saturday mornings, but I had a photoshoot yesterday then was trying to keep up with my cooking. So with out any further delay here is this weeks Pancake of the week! I decided to do a little bit of a twist with it. You know mix it up with another breakfast food everyone loves, French Toast. Yup that’s right I am making French Toast Pancakes. This is just me playing around and having a little bit of fun with pancakes and seeing if I could actually do this and have them come out… and guess what!? They did come out, they were freaking AWESOME!! This is one of those not too hard recipes that gives breakfast a new slant and you guys will love it. French Toast Pancakes Recipe
Ingredients
- 1 Cup Flour
- 2 Tbsp. Sugar
- 1-1/4 tsp. Cinnamon
- 1 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1 Cup Buttermilk
- 3 Eggs
- 2 Tbsp. Vegetable Oil
- 1 tsp. Vanilla
- 1/2 Cup Milk
- Salt
Instructions
- In a medium bowl, combine the flour, sugar, 1 tsp. cinnamon, baking powder, baking soda, and salt. Whisk to combine.
- In a small bowl, mix together the buttermilk, 1 egg, oil, and vanilla
- Stir the wet ingredients into the dry ingredients until combined.
- Pour ¼ cup of batter onto a heated griddle or skillet. Cook for 3 minutes or until bubbles have formed on the surface and popped. Flip the pancake and continue cooking until cooked through.
- Set pancakes aside until cool enough to handle.
- Meanwhile, in a shallow dish, such as a pie plate, whisk together the 2 eggs, milk, and remaining cinnamon.
- Dip each pancake in the egg mixture and let sit for 15 seconds per side. Transfer to the griddle and cook for 2 more minutes per side.
