Today I just wanted to mess around a little bit and throw one of those mixed together recipes, you know a little this recipe a little of that recipe. This time I am making some Pizza Stuffed Shells. This is a pretty simple dinner recipe (well I guess it could be lunch too lol) that is just plain cool you know. It is something a little different so you can mix up those dinners and no one complains of the same old thing over and over all the time. Honestly if you have kids and put this in front of them it will be gone pretty darn quickly! So go ahead guys make this one give it a try and let me know what you think!!

Pizza Stuffed Shells Recipe
Ingredients
- 1/2 lb. Italian Sausage
- 1/2 Onion, Minced
- 1/2 Bell Pepper, Chopped
- 2 Garlic Cloves, Minced
- 1/2 Cup Mini Pepperonis
- 16 oz. Ricotta Cheese
- 2 Cups Mozzarella, Shredded
- 1 Cup Pasta Sauce
- 1 tsp. Italian Seasoning
- 1-11/2 tsp. Basil
- 1 Box Jumbo Pasta Shells
Instructions
- Boil jumbo pasta shells according to package directions, minus 1-2 minutes. You want them a little bit undercooked since they'll continue cooking in the oven.
- Drain shells and let cool a bit.
- Preheat oven to 375 degrees F and spray a 9×13" baking dish with cooking spray. Set aside.
- Heat a large skillet over medium heat and brown sausage. Use spatula or potato masher to finely crumble the sausage as it browns.
- The last few minutes of cooking the sausage, add onions, green pepper and garlic.
- To a mixing bowl, add ricotta cheese, cooked sausage, onions, green pepper, garlic, pepperoni, 1 cup of the mozzarella cheese, Italian seasoning and basil.
- Use a spoon to fill pasta shells with cheese mixture, then place shells in baking dish.
- Top with pasta sauce and sprinkle with final 1 cup of mozzarella cheese.
- Add some additional mini pepperoni slices, and sprinkle with a bit of Italian seasoning.
- Bake for 20-25 minutes, until cheese is melted and bubbling.
