Ok on with the recipe lol. So while it is raining on and off I have been able to jump out to the grill a few times already (though I can’t set up to film until the weather gets better lol). Today’s recipe was one of those get out on the grill days but it was also a quick and easy chicken dinner recipe. I made some Mediterranean Chicken Kabobs. A simple and cool tasting kabob you can make for lunch or dinner. The ingredients aren’t exotic and you probably only need to pick up a couple things from the store you don’t already have. So when you do make this one make sure to take a picture and post them to my Facebook page.

So I am taking a couple of weeks off of work (real job lol) to get some of my projects in order. I just sat with my brother today and pumped out the first part of one project. Mediterranean Chicken Kabobs Recipe
Ingredients
Marinade:
- 3 Garlic Cloves Minced
- 1/2 Cup Olive Oil
- 2 Tbsp. Lemon Juice
- 2 tsp. Paprika
- 1 tsp. Italian Seasoning
- 1 tsp. Nutmeg
- Salt
Kabobs:
- 2 Chicken Breasts Chunked
- 1 Onion Chunked
- 1 Bell Pepper Chopped
Garlic Sauce:
- 1 Cup Greek Yogurt Plain
- 2 Garlic Cloves Minced
- 1 Tbsp. Dill Chopped
- 1 Tbsp. Lemon Juice
- 1 Tbsp. Olive Oil
- Salt
- Pepper
Instructions
- In a small bowl mix together all marinade ingredients.
- In a large bowl put all cubed chicken, chunked bell pepper and onion. Pour marinade over chicken and vegetables.
- Cover the bowl and put in the refrigerator for at least 30 minutes.
- After marinade has had time to soak in put chicken, bell peppers, and onion onto your skewers.
- Cook on your grill over medium heat for about 15-20 minutes turning every 5 minutes. Making sure chicken is cooked all the way through before pulling off of the grill.
- While the chicken is grilling mix all of the garlic sauce ingredients together.
- Serve and enjoy!
