Sausage Pizza Sweet Potatoes

Today’s recipe is one that I made specifically for the wife. She loves.. LOVES this recipe and had been asking me for awhile to make it for her on one of my filming or dinner days. Well I finally got around to making these Sausage Pizza Sweet Potatoes! The only real issue with this recipe is going to be your want.. no NEED to keep eating because it tastes so freaking good. On top of tasting good this is a healthier recipe. I know I do a TON of comfort food that is horrible for you but this is a recipe you can take comfort in and not feel guilty about eating. Sausage Pizza Sweet Potatoes Recipe

Ingredients
  

  • 4 Sweet Potatoes
  • 1 lb. Sweet Italian Sausage
  • 1/2 Onion Chopped
  • 4 Garlic Cloves Minced
  • 1/3 Cup Sun Dried Tomatoes Chopped
  • 2 tsp. Olive Oil
  • 1 tsp. Italian Seasoning
  • Red Pepper Flake
  • Salt
  • Pepper

Instructions
 

  • Pre-Heat your oven to 400˚.
  • Lightly coat your sweet potatoes with olive oil. Sprinkle with a little bit of salt, wrap in tinfoil and bake for about an hour.
  • When potatoes are almost done. Heat a 2 tsp of oil in a pan/skillet. Crumble the Italian Sausage and sprinkle it with the red pepper flake. Cook until sausage is browned.
  • Add in chopped onions and cook until they are translucent. Add in the garlic, sun dried tomatoes and Italian seasoning. Allow ot cook for a couple of minutes, then remove from heat.
  • Once potatoes are done, carefully cut in half and scoop out the insides. Mix scooped potato into sausage, salt and pepper to paste.
  • Scoop the mixture back into the shelled potatoes and bake for another 15 minutes!
