Loaded Grilled Cauliflower

I have been asked a ton of times if I have healthier recipes…. I do but they seem to do badly view wise.. BUT BUT let’s try to see if we can change that! Well tomorrow is the 4th of July, the biggest grilling day of the year. So I figured let’s make healthier recipe to have out on the grill and entertain your family and friends with! So here we go Loaded Grilled Cauliflower!! Now I am not a huge fan of cauliflower but this Loaded Grilled Cauliflower is so much better than it has any right to be lol. Even if this isn’t your main side trust me you will be the winner by setting this out as an alternative side dish for everyone. Then like me you will totally be turned into a cauliflower person lol. Seriously guys give this version of cauliflower a try I know you will love it! Loaded Grilled Cauliflower Recipe

Ingredients
  

  • 2 Cauliflower Heads
  • 1/2 Cup Olive Oil
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Paprika
  • 2 Cups Cheddar Cheese Shredded
  • 10 Bacon Slices Cooked and Crumbled
  • 2 Tbsp. Green Onion Diced
  • Salt
  • Pepper

Instructions
 

  • Remove the leaves from your cauliflower. Trim the stem off but leave the core intact.
  • Slice your cauliflower into roughly 3/4" steaks. You will get a few good steaks from each head. Any loose florets that fall off keep we are using those too.
  • In a small bowl mix together olive oil, garlic powder, paprika, salt and pepper. Brush both sides of cauliflower (steaks and florets) with oil mixture.
  • Place cauliflower (stead and florets) onto a heated grill. Allow to cook until it begins to char (6 to 8 minutes) flip and cook on the other side for the same amount of time.
  • After flipping the cauliflower layer the shredded cheese on top of the cauliflower and allow to completely melt.
  • Remove from the grill and top with ranch, bacon and green onions.
