Even better how about an easy no bake cheesecake. Ok not just any little cheesecake though we are making a Cherry Chocolate Chip No Bake Cheesecake!! Go ahead and read that one a few times, everything about that name sounds amazing! The Best Cherry Chocolate Chip No Bake Cheesecake Recipe!!
Ingredients
Crust:
- 25 Oreo Cookies
- 3 Tbsp. Butter Melted
- 1 Tbsp. Sugar
Filling:
- 16 oz. Cream Cheese Softened
- 16 oz. Heavy Cream
- 1 Cup Sugar
- 1/4 Cup Powdered Sugar
- 16 oz. Box Cherry Gelatin
- 12 oz. Frozen Cherries Thawed and Chopped
- 2 Cups Chocolate Chips
Instructions
- In a small pot bring 1-1/2 Cups of water to a boil, add in the gelatin and mix until it is dissolved. Once completely dissolved remove from heat and allow to cool.
- Place Oreos into your food processor, pulse it so they are finely crushed. Place in a bowl, add the sugar and melted butter. Once combined press into the bottom of a spring form pan and place in the fridge so it can firm up.
- In a medium bowl beat the cream cheese and granulated sugar until completely mixed.
- In a second bowl whip the cream and powdered sugar until stiff peaks start to form. Fold in the cooled and thickened gelatin until completely blended. Fold cream cheese mixture into the whipped cream. Last fold in the cherries and chocolate chips.
- Pour the mixture into the spring form pan over the firmed crust. Place back in the fridge for at least 4 hours to completely firm up.
- You can garnish with whole cherries, more chocolate chips, or crushed Oreos to give it a real pop once done.
