I love a good meat lover’s pizza, but my wife loves veggie pizzas, and that exactly what we are making. This Mediterranean Pizza is the perfect thing the veggie loves in the house. Heck, not just the veggie lover this pizza is so freakin’ good everyone will destroy this Mediterranean Pizza. How to Make a Mediterranean Pizza
Ingredients
- 2 Cups Onions Sliced
- 1 Cup Baby Spinach Chopped
- 3/4 Cup Fire Roasted Red Peppers Chopped
- 3/4 Cup Marinated Artichoke Hearts Chopped
- 1/2 Cup Olives
- 1 Tbsp. Balsamic Vinegar
- 1 tsp. Garlic Powder
- 1/2 tsp. Oregano
- 1/2 tsp. Crushed Red Pepper
- 1 Refrigerated Pizza Crust
- 1 Cup Pizza Sauce
- 1 Cup Feta Cheese
Instructions
- Heat a couple of tablespoons of oil in a pan/skillet. Once hot add in the onions and sauté with a little bit of salt until translucent. Lower the heat and continue to cook stirring occasionally until they are a golden brown.
- Add in the chopped spinach, cook until it begins to wilt, then add in artichoke hearts, roasted peppers, olives, garlic powder, oregano, balsamic vinegar, and red pepper flakes.
- Cook for a couple of minutes until the moisture is evaporated from the vegetable mix.
- Preheat your oven to 425˚F. Place your crust on a pizza stone or baking sheet. Poke the crust with a fork several times then brush with olive oil. Bake for about 6 to 8 minutes until the crust begins to get color.
- Carefully remove the crust from the oven, spread the pizza sauce over the top, then the vegetable mixture, and last the feta cheese. Bake for another 10 to 12 minutes until the crust is golden brown.
