Spinach Artichoke Manicotti

We made it to Friday! OMG yes, I need this weekend. Today we are throwing down with a simple yet cool dinner. We are making Spinach Artichoke Manicotti. This is a quick and easy dinner that you can whip out for the family to rave reviews. How to Make Spinach Artichoke Manicotti

Total Time 1 hour 10 minutes

Ingredients
  

  • 1 8oz Box Manicotti
  • 16 oz. Ricotta Cheese
  • 1 pckg. Frozen Spinach Thawed
  • 1 Cup Artichoke Hearts Chopped
  • 2 Cups Mozzarella Cheese Shredded and Divided
  • 3 Tbsp. Butter
  • 2 Garlic Cloves Minced
  • 2 Tbsp. Flour
  • 2 Cups Milk
  • 1/2 Parmesan Cheese Grated
  • 1/2 Lemon Juiced
  • Salt
  • Pepper
  • Red Pepper Flake

Instructions
 

  • Preheat oven to 350˚F. Add water into a large pot and bring to a boil, ad din manicotti and cook for about 5 minutes.
  • In a pan or skillet melt butter and add in garlic. Allow garlic to cook until fragrant about 1 minute. Whisk in flour and allow to cook for about 1 minute until it becomes golden and bubbles. Slowly whisk in the milk, then parmesan, lemon juice and salt and pepper. Reduce heat and allow to simmer for about 5 minutes.
  • In a large bowl combine ricotta, spinach, artichoke hearts, 1/2 Cup of mozzarella, salt, pepper and a little red pepper flakes.
  • Add about 1/4 Cup of cheese sauce into a baking dish. fill each manicotti with ricotta mixture and lay into the dish. Pour the remaining sauce over manicotti and top with mozzarella. Cover with foil and bake for about 20 minutes. Remove foil and continue to cook another 10 minutes.
