Oktoberfest Potato Stacks

Wow! October is really underway already, man this year is just flying by! Anyway, I decided I would do at least one little Oktoberfest-style recipe. So let’s throw down and make something cool. These Potato Stacks are a great little appetizer you will totally fall in love with the first time you try them. The beer-braised sausage is freaking incredible! Awesome Oktoberfest Potato Stacks

Total Time 40 minutes
Course Appetizer, Gameday, Snack

Ingredients
  

  • 2 Russet Potatoes
  • 6 oz. Smoked Sausage Slices
  • 2 Onions Sliced
  • 1/2 Cup Beer
  • 3/4 Cups Sauerkraut Drained
  • Salt
  • Pepper
  • Olive Oil

Instructions
 

  • Preheat oven to 400˚F.
  • Slice potatoes in 1/2 inch slices and place in a medium bowl. Drizzle with olive oil, salt and pepper and toss. Place slices onto a backing sheet and bake for about 40 minutes flipping half way through.
  • In a pan/skillet drizzle a little olive oil and heat. Add in sliced sausage and cook for several minutes on each side then remove from the pan.
  • Add a little more oil into the skillet, then sliced onions, salt and pepper. Cook for about 15 minutes stirring frequently. Once caramelized add in beer and allow it to cook for several minutes. Once it has reduced down and thickened up add sausage back in, stir to combine and allow to go a couple more minutes.
  • To assemble place about 1 tablespoon of sauerkraut onto each potato slice, add the sausage slice, onions and you are ready to serve.
