Creamy Sausage Tortellini Soup

I have been meaning to jump back into soups for a while now but have totally been distracted. So today, today is the day to throw down with some soup lol. We are making a simple Creamy Sausage Tortellini Soup. This is a hit the spot hearty stick to the ribs kind of soup that will warm you up on a chilly evening. It is also easy to tweak by adding or taking away a few ingredients. I mean isn’t this what it is about, making the recipes your own. How to Make Creamy Sausage Tortellini Soup

Ingredients
  

  • 1 lb. Italian Sausage
  • 1 Onion Diced
  • 1 Shallot Diced
  • 2 Carrots Peeled and Diced
  • 4 Garlic Cloves Minced
  • 1/4 Cup Flour
  • 5 Cups Chicken Broth
  • 14 oz. Cheese Tortellini
  • 6 oz. Spinach Chopped
  • 2 Cups Half and Half
  • 1/2 tsp. Italian Seasoning
  • Salt
  • Pepper

Instructions
 

  • In a large pot, break up and cook sausage over a medium heat until it is browned. Transfer to a paper towel lined plate and set aside.
  • In the same pot add about 1 tablespoon of olive oil, add onion, shallots and carrot. Sauté for about 5 minutes, until the vegetables get soft. add the garlic and allow it to get fragrant about another minute.
  • Whisk in flour until there are no clumps, allow to cook for about 1 minute. Slowly whisk in the chicken broth until completely combined. Cook until it reaches a boil, tun down heat and allow to simmer for about 6 or 7 minutes.
  • Add sausage back into the pot along with the tortellini, spinach, half and half, Italian seasoning, salt and pepper. Continue to simmer until tortellini is cooked about another 5 minutes.
