Roast Beef Po’ Boy

Happy Friday everyone! Today’s recipe came about while I was on vacation and traveling around the Biloxi area we stopped at a place called Bozo’s and got Po’ Boys. I sent her a picture of the Roast Beef Po’ Boy and she fell in love with how it looked. So we decided to make some Easy Homemade Roast Beef Po’ Boys! JRoc and his family already tried these and gave them the approval! So go ahead you will totally fall in love with them. Easy Homemade Roast Beef Po’ Boy

Total Time 10 hours 10 minutes
Course Dinner, Gameday, Launch, Main Course

Servings 8 Servings

Ingredients
  

  • 3 lb. Beef Chuck Roast
  • 4 Tbsp. Cajun/Creole Seasoning I used Tony's
  • 1 Packet Brown Gravy Mix
  • 1 15 oz. Can Beef Broth
  • 2 Tbsp. Cornstarch
  • Day Old French Bread
  • Lettuce Shredded
  • Tomatoes Sliced
  • Pickles
  • Mayonnaise

Instructions
 

  • Place roast in the slow cooker, in a large bowl whisk together the broth, the seasoning and gravy mix. Pour over the roast.
  • Set slow cooker to low and allow to cook for 10 to 12 hours or on high for about 4 1/2 hours.
  • When done cooking remove the roast from the slow cooker. Mix cornstarch into about a half cup of water, once completely combined pour into the gravy and stir until it thickens to your desired consistency. Shred the beef and add it back into the gravy.
  • Split french bread in half, place meat on bottom half of the bread. On the other half spread mayo top with lettuce, tomato and pickles. Close and eat and enjoy!
