Dark Chocolate Cupcakes w/ Chocolate Ganache Frosting

This time around my daughter picked the recipe, and being a cute five year old she wanted chocolate cupcakes. I didn’t want to do just plain old chocolate cupcakes so knocked this one out. Maddie helped through a god portion of it but soon her Monster High Dolls became more interesting then baking Dark Chocolate Cupcakes lol.

Dark Chocolate Cupcakes w/ Chocolate Ganache Frosting Recipe

Total Time 1 hour 30 minutes

Ingredients
  

  • 2 oz. bittersweet chocolate finely chopped
  • 1/4 cup Dutch unsweetened cocoa powder
  • 1/4 cup packed light brown sugar
  • 1/4 cup hot brewed coffee
  • 1/2 cup all purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 large egg + 1 egg yolk
  • 1/4 cup vegetable oil
  • 1/4 cup buttermilk
  • 1 teaspoon pure vanilla extract

For Ganache Frosting

  • 1 cup Heavy Cream
  • 2 tablespoons light corn syrup
  • 2 tablespoons unsalted butter
  • pinch of salt
  • 8 oz. chopped bittersweet or semisweet chocolate

Instructions
 

  • Pre-Heat oven to 325 degrees. Line a 24 cup mini muffin pan with paper liners.
  • Combine the chocolate, cocoa powder and brown sugar in a large bowl, add hot coffee and whisk together. Let cook to room temperature.
  • Whisk the flour, granulated sugar, salt and baking soda into a medium bowl.
  • Whisk the egg, egg yolk, vegetable oil, buttermilk and vanilla into the melted chocolate mixture. Add the flour mixture and whisk and until smooth.
  • Spoon a tablespoon of batter into each muffin cup (just a little past the half way point). Bake until a toothpick inserted into centers comes out clean, about 15 minutes.
  • Fill a large bowl halfway up with ice water.
  • Combine heavy cream, corn syrup, butter and salt in a medium saucepan and bring to simmer. Remove form the heat, add the chocolate and whisk until smooth let cool to room temperature.
  • Carefully place in ice water and let sit stirring every couple of minutes, until frosting is thick enough to spread. About 15 minutes.
  • Spread frosting on cupcakes (whether using a piping bag or just spreading a little on each cupcake).
  • Eat…… err I mean serve =)
