I love Elotes, Mexican Street corn. So I really like to have fun experimenting with it and creating new recipes from it. I started making this one when I was making an Elote dip and was craving Jalapeño. So grabbed a handful of peppers hit the grill and roasted them up. Grabbed a couple of more ingredients and boom! I had it Elote Stuffed Roasted Jalapeno, and OMG I was not let down by how this experiment turned out. In the video I seed the peppers but usually I leave about half the seeds in because I like it when it has a real kick to it. So go ahead and give this one a shot and let me know what you think!

Elote Stuffed Roasted Jalapeno Recipe
Ingredients
- 5 Ears of Corn on the Cob
- 3/4 Cup Plain Greek Yogurt
- 2 Tbsp. Mayonnaise
- 1/3 Cup Goat Cheese
- 1/2 Cup Red Onion Chopped
- 1/2 Bell Pepper Chopped
- 1/2 Tbsp. Paprika
- 1 tsp. Cumin
- Juice form 1 Lime
- Salt
- Pepper
- Cotija Cheese
- Chili Powder
