One of my Dad’s favorite sandwiches is the Reuben. It is one of two sandwiches he orders where ever he goes. When we would go to Tilted Kilt it is a throw up if he will spend more time flirting with the waitress or tearing into a Reuben lol. So with Dad coming over a lot more often now to visit the grandkids I started playing with different Reuben recipes. The Reuben Egg Roll is one of the ones that came out the best out of them all. I think this is because I have a complete fondness for Egg rolls and love playing with them, so this is a great combination of my and my Dad’s food loves lol. I think you guys will enjoy this one too so go ahead and give it a shot.

- 8 oz. Deli Sliced Corned Beef Chopped
- 8 oz. Swiss Cheese Chopped
- 1/2 Cup Sauerkraut
- 3 Tbsp. Thousand Island Dressing
- 15 Egg Roll Wrappers
- Small Cup of Water
