I was thinking about what I should film this time around. Sometimes I really get stumped. I mean I have hundreds of different things I play with and have fun with. So with this mass of recipes I really get stumped sometimes. So occasionally I just film myself cooking a lunch or a dinner I am prepping for the family rather than a recipe just for the show. This is exactly one of those. These Chicken Enchilada Stuffed Poblanos are such a great little recipe I know you guys will totally love this one. It is a really cool twist on simple Chicken Enchiladas that really pop. It doesn’t take a long time to make and is a game changer when you bring it to the dinner table.

Chicken Enchilada Stuffed Poblanos Recipe
Ingredients
- 1 lbs. Boneless
- Salt
- Pepper
- 1 Cup Corn
- 1 Cup Cooked Rice
- 2 Cup Cheddar Cheese
- 4-5 Large Poblanos
- 2 Tbsp. Butter
- 2 Tbsp. Flour
- 14 oz. Chicken Broth
- 11 oz. Ro-Tel
- 4 oz. Cream Cheese
- 1/2 Cup Sour Cream
