Occasionally I to do a complete dinner side and all. This is one I LOVE! It is a great tasting complete meal. You know we could always use extra fish in our diets too. Crispy Cod is a nice light dinner for hot summer nights. Making it even better is this is a quick and easy recipe. The Summer Squash is something that tastes amazing and you know you will feel no guilt eating it since it is good for you. So together the two make the perfect dinner that you guys will totally love, so go ahead make this one and dig in!

- 2 Cod Filets
- 1 Egg
- 2 Oz. Arugula
- 2 Garlic Clove
- 1 Yellow Summer Squash
- 2 Tbsp. Almonds
- 2 Tbsp. Champagne Vinegar
- 1 Tbsp. Dijon Mustard
- 1/2 Cup Panko
- 1/4 Cup Red Quinoa
- 1/4 Cup Flour
