Blackstone Chicken Fried Rice

From the title of this video can you guess what I got for my Birthday? Yup, I got a Blackstone Griddle! So I wanted to start playing and having some fun with it. First up, is one of my wife’s favorite dishes. Chicken Fried Rice!!! It is so quick and easy on the Blackstone. I mean seriously it was like WOW!!! I won’t like I am having so much fun with this thing, my grill and smoker are going to start getting jealous soon lol. Blackstone Chicken Fried Rice

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients
  

  • 2 Chicken Breasts Chopped
  • 2 Tbsp Sesame Oil
  • 2 Tbsp Vegetable Oil
  • 4 Cups White Rice Cooked and Cooled
  • 3 Tbsp Soy Sauce
  • Salt
  • Pepper
  • 1 Cup Frozen Peas and Carrots
  • 3 Eggs Lightly Beaten

Instructions
 

  • Preheat 1 side of the griddle over a medium heat
  • Add vegrtable oil to griddle and spread it around with your spatula. Saute chicken in the hot oil tossing occassionallyuntil the chicken is cooked all the way through. Push it to the cooler side of the griddle.
  • Add Peas and carrots, sauting until they are soft, about 5 minutes. Then move to the cool side and add the eggs and scramble. Again move them over to the cooler side.
  • Last add the rice on the the griddle, with the sesame oil, soy sauce, salt and pepper. Saute rice for about 5 minutes until heated through and browned. Then mix everything together and serve!
