Puerto Rican Bolitas de Yuca
Ingredients
- 16 oz. Frozen Yuca
- 1/4 lb. Mozzarella Cheese Cubed
- Salt
- Pepper
- 2 Tbsp. Guava Paste
- 1/4 Cup Vinegar
Instructions
- Bring a large pot of water to a boil, Add about 1 tablespoon of salt to the water and add in the yuca. Cook until fork tender, about 15 to 20 minutes.
- Drain the yuca and remove the woody stems. Place in a bowl, salt and pepper to taste and mash until smooth.
- Take about 2 tablespoons of mashed yuca and place it in your palm. Place a cheese cube in the center and pinch the yuca shut forming a sealed ball.
- Heat about 1/2 inch of oil in a pan over high heat, add yuca and cook for about 1 to 2 minutes per side until golden brown. Remove from oil and set on paper towel.
- Microwave guave paste and vinegar until the the paste is melted. Mix together until it is the consistancy of BBQ sauce.
- Dip fried yuca in the sauce and enjoy!
