Hey everyone, happy Saturday! Man these Pancakes of the Week are flying by. I am getting close to that magic number 50. Then we will be moving over to French toast. Well today’s pancake is another awesome dessert for breakfast recipe. I am making some great Boston Creme Pie Pancakes! OMG these things are so freaking awesome. The cream filling in these is so freaking good guys and you add that chocolate sauce this is a 100% WOW them kind of breakfast. Boston Creme Pie Pancakes Recipe
Ingredients
Pancakes
- 1 Cup Yellow Cake Mix
- 1 Cup Pancake Mix
- 1 Cup Milk
- 2 Eggs
- 1 tsp. Vanillas
Cream Filling
- 1 Cup Milk
- 1 Cup Half & Half
- 1/3 Cup Sugar
- 5 Egg Yolks
- 2 Tbsp. Vanilla
- 1-1/2 Tbsp. Cornstarch
- 1 Tbsp. Butter
Chocolate Sauce
- 1 Cup Heavy Cream
- 8 oz. Chocolate Chips
Instructions
Cream Filling
- In medium sauce pan heat milk, heavy cream and vanilla bringing it to a boil. Turn heat off and set aside for about 10 minutes.
- In bowl whisk egg yolks and sugar until fluffy. Add in cornstarch and continue to whisk until smooth. Pour about 1/4 Cup of the warm milk mixture into egg and continue to whisk until completely combined, then slowly whisk in the rest of the milk.
- Cook over medium heat constantly stirring until it thickens. Cover and refrigerate for about an hour.
Chocolate sauce
- In small sauce pan heat heavy cream, stir in chips and whisk until completely melted and set aside.
Pancakes
- In large bowl whisk together cake and pancake mix. Stir in all the wet ingredients until completely combined.
- Heat pan/skillet and about 1/4 cup at a time pour batter into pan. Cook until pancakes are a golden brown on both sides. About 3-4 minutes each side.
- To serve stack pancakes layering cream between each pancake and top with chocolate sauce.
