Here is another Breakfast/Brunch for you guys. This one is good for either a small intimate breakfast of serving for a large get together. It is quick easy, unique and taste great. Breakfast potato skins is n easy way to mix up that morning menu.
Breakfast Potato Skins Recipe

Ingredients
- 4 Large Russet Potatoes
- 6 Slices of Bacon
- 1/4 Cup of Milk
- 1 Cup Shredded Cheddar Cheese
- 2 Green Onions thinly chopped
- 4 Large Eggs
Instructions
- Preheat the oven to 375 degrees. You can either bowl your potatoes (this is what I did) or you can put poke holes with a fork then microwave them for about 16 minutes.
- Cook Bacon in a large skillet over medium heat, turning occasionally, until crispy. Reserve 2 tablespoons of the drippings. Finely Chop cooked bacon.
- Slice off the tops of the Potatoes, scoop out the potatoes into a bowl. You want to create as deep of a bowl as you can leaving about a 1/4 thick wall on the potato.
- Add the 2 Tablespoons of bacon drippings and warmed milk into the bowl of potatoes and mash. Mix in cheese, onions, and the chopped bacon.
- Fill the hollowed out potatoes with the mix, press it in tightly with a spoon creating a long a deep well for the eggs.
- Place potatoes onto a baking tray, crack eggs and carefully pour into the well in each potato.
- Place potatoes into oven for 20 – 25 minutes.
- Once potatoes are done cooking season to your taste place a half slice of bacon on top and sprinkle a little green onion over it for contrast.
Notes
I LOVE a little hot sauce on this too, but that’s just me and my love of hot sauce =)
