Broccoli Cheddar Stuffed Baked Potatoes

Wow! Today kicked my rear at work! Can you tell? I am super late on today’s post =( on top of that I totally had a rough time filming and editing lol. Forgot to turn the camera on at one point. D’oh! lol But the recipe is totally worth it. I am making some simple yet awesome Broccoli Cheddar Stuffed Baked Potatoes. Come on who doesn’t love these? They are the perfect side dish for any dinner and you know you would totally dig into them lol. Awesome Broccoli Cheddar Stuffed Baked Potatoes

Total Time 1 hour 30 minutes

Ingredients
  

  • 4 Large Russet Potatoes
  • 2 Cups Broccoli Florets Chopped
  • 1/2 Cup Sour Cream
  • 2 Cups Cheddar Cheese Shredded
  • Salt to Taste

Instructions
 

  • Preheat your oven to 400˚F. Wrap potatoes in foil, and place in the oven for at least an hour.
  • While potatoes are baking, bring a pot of water. toa boil, place a strainer over the pot and place broccoli in. Allow to steam for about 4 to 5 minutes, until it is crisp and tender. Remove from heat and chop.
  • Slice the tops of the potatoes off and scoop insides of potatoes into a bowl, Add in sour cream, broccoli, 1 Cup of cheese and salt to taste. Mash until smooth.
  • Scoop mashed potatoes back into hollowed out skins, stop with remaining cheese, and place back in the oven for another 10 minutes.
