Buffalo Chicken Chili

Today is cold and rainy here so this recipe is landing with some perfect timing lol. Why? Well, come on what is better than chili on a cold and rainy day? Well ok yea Buffalo Chicken Chili would be better lol. I mean why not right? I love Buffalo Chicken, I love chili. This is a simple mashup of two cool recipes that works well is easy to tweak.. adding more or less Buffalo sauce and seasonings to make it hit hotter or lighten up a little. How to make Buffalo Chicken Chili

Total Time 1 hour
Course Dinner, Lunch, Main Course
Cuisine American, Barbecue
Servings 6 Servings

Ingredients
  

  • 1 lb. Ground Chicken
  • 15 oz. Can White Beans Drained & Rinsed
  • 2- 3 Tomatoes Chopped
  • 2 Cups Chicken Broth
  • 1/2 Cup Buffalo Sauce
  • 1 Package Ranch Dressing Mix
  • 1 Cup Frozen Corn Kernels
  • 1/2 tsp. Onion Powder
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Celery Salt
  • 8 oz. Cream Cheese
  • Blue Cheese Crumble
  • Salt
  • Pepper

Instructions
 

  • Break up and brown chicken in a large pot.
  • Once browned ass in all of your remaining ingredients except for the cream cheese. Stir and mix together.
  • Bring ingredients to a boil, turn the heat down and place the cream cheese into the pot. Cover and allow to simmer for about 45 minutes.
  • Stir to mix in the melted cream cheese, top with blue cheese crumble and serve.
