Today is cold and rainy here so this recipe is landing with some perfect timing lol. Why? Well, come on what is better than chili on a cold and rainy day? Well ok yea Buffalo Chicken Chili would be better lol. I mean why not right? I love Buffalo Chicken, I love chili. This is a simple mashup of two cool recipes that works well is easy to tweak.. adding more or less Buffalo sauce and seasonings to make it hit hotter or lighten up a little. How to make Buffalo Chicken Chili
Ingredients
- 1 lb. Ground Chicken
- 15 oz. Can White Beans Drained & Rinsed
- 2- 3 Tomatoes Chopped
- 2 Cups Chicken Broth
- 1/2 Cup Buffalo Sauce
- 1 Package Ranch Dressing Mix
- 1 Cup Frozen Corn Kernels
- 1/2 tsp. Onion Powder
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Celery Salt
- 8 oz. Cream Cheese
- Blue Cheese Crumble
- Salt
- Pepper
Instructions
- Break up and brown chicken in a large pot.
- Once browned ass in all of your remaining ingredients except for the cream cheese. Stir and mix together.
- Bring ingredients to a boil, turn the heat down and place the cream cheese into the pot. Cover and allow to simmer for about 45 minutes.
- Stir to mix in the melted cream cheese, top with blue cheese crumble and serve.
