For years I couldn’t stand sweet potatoes, but recently I found a love for them so have been working them into a lot of recipes. I started trying to figure out ways I could replace regular potatoes with them. Thing is the difference in taste you can’t just do a straight swap you have to change other things up a little bit. So when I wanted to make a loaded Chili Baked Potato with a sweet potato I had fun thinking of ways to replace it, though I ended up pretty far from chili lol. I ended up with this awesome Buffalo Chicken Stuffed Sweet Potato! This is a really filling dinner (or lunch) that has the added bonus of being much healthier than many dinners you may have wanted to make lol.
