I love great Latin food. While Bunuelos de Platano con Queso is not a Puerto Rican recipe more of a South American one, a lot of the ingredients are very similar to ones found in Puerto Rican cuisine. The first time I had this I was in love.. no seriously I was totally in love with this one. I had sworn up and down it was Puerto Rican and went to Dad and asked why haven’t you made this for me!! Lol If you can imagine me swinging food in his face yelling you have the scene about right. Anyway come to learn no, it wasn’t a Puerto Rican recipe but OMG is this so good I am co-opting and claiming it as my own anyway lol. This is one no matter what your background is I know you guys will totally be into this one so go ahead and give it a try.

Bunuelos de Platano con Queso/Cheesy Fried Corn and Plantain Fritters Recipe
Ingredients
- 2 Yellow Plantains
- 1 tsp. Corn Starch
- 1/2 tsp. Cumin
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Paprika
- Salt
- Pepper
- 1 Cup corn
- 1 Serrano Pepper
- 2 Tbsp. Cilantro
- 10-12 Cubes of Jack Cheese
- 1 Cup Panko
