Cheesecake Cookies – Soft, Buttery & Topped with Cream Cheese Frosting!
Ingredients
Cookie Dough:
- 1/2 Cup Butter Softend
- 1/3 Cup Sugar
- 1/4 Cup Brown Sugar
- 1 Egg
- 1 tsp. Vanilla
- 1-1/3 Cup Flour
- 1 Cup Graham Crackers Crushed
- 1/4 tsp. Salt
- 1/4 tsp. Baking Soda
- 1/2 tsp. Baking Powder
Frosting:
- 4 oz. Cream Cheese Softened
- 4 Tbsp. Butter Softened
- 1 Cup Powdered Sugar
- 1 tsp. Vanilla
Crumble Topping:
- 1/3 Cup Graham Grackers Crushed
- 1 tsp. Sugar
- 1-1/5 Tbsp. Butter Melted
- Salt
Instructions
- 🔥 Preheat & Prep – Get that oven to 350°F and line a baking sheet with parchment paper. Set it aside while we mix things up!
- 🍪 Make the Dough – In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth. Mix in the egg and vanilla until fully combined.
- 🥣 Mix the Dry Ingredients – Stir in flour, graham cracker crumbs, salt, baking soda, and baking powder until just combined—don’t overmix!
- 🔵 Scoop & Roll – Use a ¼ cup cookie scoop to make 8 equal-sized cookie dough balls. Roll them in your hands, then coat them in crushed graham crackers for that perfect cheesecake crust feel.
- 📌 Bake to Perfection – Place the cookies on the baking sheet, gently press them down to about ¾ inch thick, and bake for 9-10 minutes. Let them cool on the baking sheet for 10 minutes before transferring to a cooling rack.
- 🧁 Make the Frosting – In a stand mixer, whip together softened cream cheese and butter until smooth. Add powdered sugar and vanilla and whip again until light and fluffy (about 2-3 minutes).
- 🎨 Frost & Top – Fill a piping bag with the frosting and swirl it onto each cooled cookie. Sprinkle with extra graham cracker crumbs for that cheesecake touch!
