Cheesecake Cookies – Soft, Buttery & Topped with Cream Cheese Frosting!

Cheesecake Cookies are the perfect mashup of soft, buttery cookies and classic cheesecake! 🍪🎂 Rolled in graham cracker crumbs for that signature crunch and topped with a rich, fluffy cream cheese frosting, these cookies are everything you love about cheesecake in a handheld treat. Easy to make, insanely delicious, and guaranteed to impress!

Ingredients
  

Cookie Dough:

  • 1/2 Cup Butter Softend
  • 1/3 Cup Sugar
  • 1/4 Cup Brown Sugar
  • 1 Egg
  • 1 tsp. Vanilla
  • 1-1/3 Cup Flour
  • 1 Cup Graham Crackers Crushed
  • 1/4 tsp. Salt
  • 1/4 tsp. Baking Soda
  • 1/2 tsp. Baking Powder

Frosting:

  • 4 oz. Cream Cheese Softened
  • 4 Tbsp. Butter Softened
  • 1 Cup Powdered Sugar
  • 1 tsp. Vanilla

Crumble Topping:

  • 1/3 Cup Graham Grackers Crushed
  • 1 tsp. Sugar
  • 1-1/5 Tbsp. Butter Melted
  • Salt

Instructions
 

  • 🔥 Preheat & Prep – Get that oven to 350°F and line a baking sheet with parchment paper. Set it aside while we mix things up!
  • 🍪 Make the Dough – In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth. Mix in the egg and vanilla until fully combined.
  • 🥣 Mix the Dry Ingredients – Stir in flour, graham cracker crumbs, salt, baking soda, and baking powder until just combined—don’t overmix!
  • 🔵 Scoop & Roll – Use a ¼ cup cookie scoop to make 8 equal-sized cookie dough balls. Roll them in your hands, then coat them in crushed graham crackers for that perfect cheesecake crust feel.
  • 📌 Bake to Perfection – Place the cookies on the baking sheet, gently press them down to about ¾ inch thick, and bake for 9-10 minutes. Let them cool on the baking sheet for 10 minutes before transferring to a cooling rack.
  • 🧁 Make the Frosting – In a stand mixer, whip together softened cream cheese and butter until smooth. Add powdered sugar and vanilla and whip again until light and fluffy (about 2-3 minutes).
  • 🎨 Frost & Top – Fill a piping bag with the frosting and swirl it onto each cooled cookie. Sprinkle with extra graham cracker crumbs for that cheesecake touch!
