Cheesecake Pancakes

Hey guys it’s Sunday again which means it’s time for another awesome Pancake recipe. This week’s Cheesecake Pancakes I picked because… well I love cheesecake. It is plain and simple, that is one of my all time favorite desserts. That in mind I figured well why not make a breakfast out of my favorite dessert. You know and not just eat Cheesecake for breakfast, though that in itself is very tempting lol. Like all pancake recipes even though completely from scratch this one is pretty darn simple to make. I mean come on by now you guys know me I can’t stand super complex recipes. On top of being super simple they come out so freaking good. When I made these so I could take pictures for the site I ended up having a couple neighbors come over for breakfast lol ( I often get asked what is on my menu by the neighbors and you can tell when something peaks their interest because I have a line at the door lol). All that said go ahead guys give breakfast a sweet little dessert twist I know you will love!

Cheesecake Pancakes Recipe

Have a little breakfast/dessert fun!
Total Time 20 minutes
Servings 6 Serves

Ingredients
  

FROSTING

  • 4 oz. Butter Softened
  • 4 oz. Cream Cheese Softened
  • 3/4 Cup Powdered Sugar
  • 2 Tbsp. Cheesecake Pudding Mix
  • 1-2 Tbsp. Milk depending on the consistency you want
  • 1 Graham Cracker Crumbled

PANCAKES

  • 3/4 Cup Flour
  • 1/4 Cup Cheesecake Pudding Mix
  • 1 Tbsp. Sugar
  • 1 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1 Cup Buttermilk
  • 1 Egg
  • 2 Tbsp. Vegetable Oil
  • Salt

Instructions
 

  • Heat a skillet over medium heat.
  • In a large bowl, mix together the flour, pudding mix, sugar, baking powder, baking soda and salt. In another bowl, mix together the buttermilk, egg and oil. Stir the wet ingredients into the dry ingredients and stir until combined.
  • Spray the skillet or griddle with nonstick cooking spray. Place ¼ cup of the batter into the pan. Use a spoon or wet fingers to spread the batter into a circle – the batter is quite thick and will not spread on it’s own. Cook for 3 minutes per side, or until browned and cooked through. Repeat with
  • In a medium bowl, beat the butter and cream cheese until light and fluffy. Add the powdered sugar, pudding mix and milk and continue to beat until combined.
  • Spread the frosting on the pancakes. Top with crumbled graham cracker.
