Well I know my shirt in the video says Taco Tuesday but with this working from home thing the days are starting to blur together so why not Taco Friday lol. Yup we are making some Cheesy Potato Tacos, a simple and easy fun version of tacos. This is a cool twist the whole family will love when you put them out for lunch, dinner what ever. So go ahead guys make this little cheesy taco I know you will love it, and when you do make sure you take a picture and post it to my Facebook page.

Cheesy Potato Tacos Recipe
Ingredients
- 1-1/2 lb. Russet Potatoes Peeled and Cubed
- 1/2 Cup Sour Cream
- 1/4 tsp. Paprika
- 1/2 tsp. Cumin
- 1/2 tsp. Chili Powder
- 1/2 tsp. Garlic Powder
- 1/4 tsp. Onion Powder
- 1/2 Cup Cheddar Cheese Shredded
- 12 Corn Tortillas
- Salt
- Cayenne
Instructions
- Place potatoes in a large pot and cover with salted water. Bring to a boil reduce heat and allow to simmer for about 15 to 20 minutes.
- Drain and transfer potatoes to a large bowl. Add sour cream, cheese, paprika (to taste), cumin, chili powder, garlic powder, onion powder, cayenne and salt. Mash together until smooth.
- In a pan or skillet heat about an 1 inch of oil until it is simmering.
- Place a couple tablespoons of potato into each tortilla and fold in half. Fry tacos for about 90 seconds to 2 minutes on each side until they are a nice golden brown. Remove from oil and place on paper towels.
- Top with your favorite toppings. I used Tomato, Onion, and some extra cheese and enjoy!
