Chicken Parmesan Lasagna

I decided that today I would do something fun. From time to time I play around with recipes combing things. That is what is what I am putting out there today something that is an awesome little combination of two great Italian recipes. I am making a Lasagna but instead of packing it with beef I am using Chicken Parmesan.. yup Chicken Parmesan Lasagna!! Yes you read that right lol. this is an amazing little (well ok not so little) dinner that is a great twist on a few of your favorites that everyone will love. The best part of all is it is a really simple recipe there isn’t a lot to it. So go ahead give this cool dinner a try and let me know what you guys think.

Chicken Parmesan Lasagna Recipe

Total Time 1 hour 20 minutes

Ingredients
  

  • 3 Chicken Breasts
  • 2 Cups Bread Crumbs
  • 5 eggs
  • 1 Cup Flour
  • 24 oz. Marinara Sauce
  • 15 oz. Ricotta
  • 8 Lasagna Noodles
  • 3 Cups Parmesan Cheese

Instructions
 

  • Preheat oven to 350°F/180°C.
  • Cut chicken breasts in half widthwise (pound thin if necessary) and season with salt and pepper.
  • Coat the chicken in flour, egg, and finally in bread crumbs.
  • Heat oil in a cast iron skillet and fry the chicken on both sides until brown (about 4 minutes each side). Set aside.
  • In a bowl, whisk one egg into the ricotta, then set aside.
  • In a casserole dish, spread ⅓ of the jar of marinara on the bottom, top with lasagna noodle overlapping with each noodle.
  • Spread half of the ricotta mixture on top of the noodles and layer with chicken.
  • Top the chicken with ½ cup of mozzarella and a ½ cup of parmesan.
  • Continue layering in the same order and top with remaining cheeses.
  • Cover with foil and bake for 45-60 minutes uncovering the lasagna for the last 10 minutes of baking.
  • Sprinkle with fresh basil and enjoy!
