Easy Garlic Scalloped Potatoes

Man we are cruising through November here! It’s already almost mid month!! Wow! That means Thanksgiving is right around the corner. The next couple of recipes will be Thanksgiving recipes or.. OR some great recipes for those left overs. Let’s start this awesome holiday season with a simple yet great tasting side dish. Garlic Scalloped Potatoes!! I mean come on what is Thanksgiving with out an amazing potato recipe lol. Go ahead guys give this one a try I know you will love it! Easy Garlic Scalloped Potatoes

Total Time 1 hour 40 minutes

Ingredients
  

  • 5 lb. Potatoes Peeled & Sliced
  • 6 Cups Onions Chopped
  • 2 Garlic Cloves Minced
  • 1/4 Cup Butter
  • 1/4 Cup Flour
  • 1-1/2 Cups Chicken Broth
  • 1-1/2 Cups Heavy Cream
  • 2 tsp. Cajun Seasoning
  • 8 oz. Sour Cream
  • 3 Cups Cheddar Cheese Shredded
  • 1 Cup Pepper Jack Cheese Shredded
  • 1 Cup Parmesan Grated
  • Salt
  • Pepper

Instructions
 

  • Preheat your oven to 400˚.
  • In a large pan, melt butter add, onions and garlic into melted butter. Sauté for about 4 to 5 minutes.
  • Whisk in the flour combining completely, allow to cook for another couple of minutes.
  • Slowly add in the broth constantly stirring to make sure there are no lumps. Mix in salt, pepper, and Cajun seasoning. Stir together and allow to cook until sauce to begins to thicken. Remove from the heat and add in 2 cups of the cheddar cheese, stir until cheese is melted.
  • In a large baking dish add 1/3 of the potato slices, then 1/3 of the sour cream, 1/3 of the cheese sauce, 1/3 of each of the remaining cheeses. Repeat this until you have used all of the ingredients.
  • Cover with foil and cook for about 1-1/2 to 2 Hours (the thicker the potatoes the longer you will let it cook). Remove the foil and place back in the oven for about another 15 to 20 minutes.
