Happy Monday everyone! No really I am about to make it really happy with a fun and simple recipe lol. We are making some Firecracker Shrimp Quesadillas. OMG these things are so good, as soon as I was done filming my 14 year old jumped on these and started in haling them lol. These are a great Weekend lunch, maybe a mix it up dinner or heck a chilling around the house late night snack. It really doesn’t matter when you decide you want these you will totally fall in love with them! So go ahead and make these bad boys and when you do make sure to take a pic and post it to my Facebook page!

Firecracker Shrimp Quesadillas Recipe
Ingredients
- 1 Box SeaPack Popcorn Shrimp
- 4 8 " Flour Tortillas
- 1 Cup Cheddar Cheese Shredded
- 1/2 Cup Mayo
- 2 Tbsp. Sriracha
- 2 Tbsp. Honey
- 2 tsp. Lemon Juice
Instructions
- Prepare popcorn shrimp according to package.
- In Medium bowl mix together mayo, Sriracha, honey and lemon juice.
- Heat skillet over medium heat. Place quesadilla in pan, payer with 1/4 cup of cheese, shrimp and another 1/4 cup of cheese. Top with the second quesadilla.
- Cook until golden brown on both sides.
- Drizzle sauce over quesadillas.
