Good morning everyone! How us everyone doing on this fine Saturday morning? I know we are all hungry for a killer breakfast/pancake recipe that will totally kill it right? I know I am lol. This week’s pancake of the week are Hot Chocolate Pancakes!! I know those just sound freaking awesome right? Well let me tell you something, being the dad of an 8 year old I know that kids love this one, then again what is totally chocolate the kids don’t love? Anyway thought the cool thing about this is it is a rich recipe, so much so that it can easily be served as a dessert rather than a breakfast and it wouldn’t be an issue at all! So whether you’re making breakfast for the wee ones (or treating yourself) making an ultra indulgent dessert for someone one or impressing the fam at a brunch this recipe totally has you covered!

Hot Chocolate Pancakes
Ingredients
PANCAKES
- 1 Cup Flour
- 1/4 Cup Cocoa Powder
- 1/3 Cup Sugar
- 1 tsp. Baking Powder
- Salt
- 1/8 tsp Cinnamon
- 1 Egg
- 1-1/4 Cup Buttermilk
- 2 Tbsp. Butter Melted
FUDGE TOPPING
- 3/4 Cup Chocolate Chips
- 1/2 Cup Heavy Cream
Instructions
FOR PANCAKES
- In a large bowl whisk together the flour, cocoa powder, sugar, baking powder, baking soda, salt, and cinnamon.
- In a medium bowl whisk together the egg, buttermilk, and melted butter. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
- Heat pan and coat with butter. Pour batter by 1/4 cup onto the hot pan, spacing apart. Cook until the edges are set and bubbles have formed on the top, about 2 to 3 minutes. Gently flip and cook for 1 to 2 minutes, or until done.
MAKE THE TOPPING
- In a small microwave-safe bowl, microwave the chocolate chips and cream until melted. Stir until smooth. Set aside.
- Stack pancakes on plates and top with the fudge sauce and mini marshmallows.
