I decided to dip back into recipes from my Easy Puerto Rican Cookbook. So over the next few weeks (probably every other week), I will be doing another recipe from the book. I figured I would do some of the ones that make life a little bit easier. You know using modern appliances to cook classics. Today I am making Instant Pot Puerto Rican Carne Guisada! That’s right those amazing Caribbean flavors without slaving for hours =) now we can just blast right through them lol. This is a quick and simple recipe, with very little active work, plus it will make an AWESOME inexpensive meal for the whole family. Instant Pot Puerto Rican Carne Guisada
Equipment
- Instant Pot
Ingredients
- 3 pounds cubed beef
- 4 diced garlic cloves
- 2 tablespoons adobo
- 1 teaspoon cumin
- 1 tablespoon flour
- 4 tablespoons sofrito
- 1 cup chopped cilantro
- 1 8-ounce can tomato sauce
- 1½ teaspoon sazón
- ¼ cup alcaparrado
- 3 peeled potatoes cut into 1 inch cubes
Instructions
- Place cubed beef in a large bowl and sprinkle with adobo, cumin, flour and toss to thoroughly coat the beef. Select sauté and add in the seasoned beef in batches browning the beef on all sides, about 5 minutes a batch.
- Add the rest of the ingredients except for the potatoes into the cooker along with the beef. Stir everything together, lock the lid into place. Cook on high pressure and set to a 10 minute cook time. When the timer is done let the pressure release naturally for about 5 minutes, then do a quick release.
- Add in the cubed potatoes and replace the lid set to high pressure again and cook for 2 more minutes. Allow the pressure to release naturally.
