Jalapeño Popper Baked Potato

Happy Friday guys! The weekend is here, well not just the weekend. A nice long Holiday weekend! Woot woot! I need this one too lol. It has been a LONG week.I figure a lot of people will be hitting the girl this weekend so why not throw out a really cool side that would kill it with a BBQ? Yup this Jalapeño Popper Baked Potato recipe is totally to die for! This is a simple and easy mashup of two great dishes… I mean come on we all LOVE potatoes, to begin with and now this.. this puts it over the top lol. So go ahead guys give this one a try, and when you do make it be sure to take a pic and post it to my Facebook page.

Jalapeño Popper Baked Potato Recipe

Total Time 2 hours
Course bbq, Side Dish
Cuisine American, Chinese
Servings 4 Servings

Ingredients
  

  • 4 Russet Potatoes
  • 4-5 Bacon Slices Cooked and Crumbled
  • 8 oz. Cheddar Cheese Shredded
  • 8 oz. Cream Cheese
  • 3 Jalapeños Seeded and Diced
  • 2 Tbsp. Butter
  • 1/2 tsp. Garlic Powder
  • Salt
  • Pepper

Instructions
 

  • Pre-heat oven to 375˚.
  • Wash off potatoes, then drizzle with olive oil, salt and pepper. and bake for an hour.
  • Cut the tops off of the potatoes, and scoop out the inside and put filling in a bowl.
  • Mix filling with cream cheese, garlic powder, butter, 3/4 of the cheddar cheese, bacon, jalapeños, salt and pepper to taste.
  • Scoop filling back into the potatoes, top with remaining cheddar, bacon and jalapeño.
  • Place back in the oven for another 15 minutes, until cheese is nice and melty
