Jalapeño Popper Twice Baked Potato

Hey guys, happy Friday! We finally made it to the weekend. Today I am throwing down with a really fun and cool recipe (that is super simple too) We are making a Jalapeño Popper Twice Baked Potato! This is the perfect side dish for any dinner. Seriously this will next level anything you guys serve it with. I mean come on we all love mashed potatoes but why not amp it up and make them fun lol. How to Make Jalapeño Popper Twice Baked Potato

Total Time 1 hour 15 minutes

Ingredients
  

  • 3 Large Russet Potatoes
  • 4 oz. Cream Cheese Softened
  • 4 Tbsp. Butter
  • 1/4 Cup Milk
  • 3/4 Cup Monterey Jack Cheese Shredded
  • 1/3 Cup Jarred Jalapeños Drained and Chopped
  • 4 Bacon Slices Cooked and Crumbled
  • Salt
  • Pepper

Instructions
 

  • Preheat the oven to 400˚F. Wash potatoes and wrap in foil. Place wrapped potatoes in the oven and bake for an hour.
  • Once done cooking carefully unwrap and cut potatoes in half. Scoop out the interior of the potatoes leaving about a 1/2 inch along the edges.
  • Place the insides ina. bowl, add cream cheese, butter, salt, pepper, and milk. Mash together until you get the desired consistency. Add in 1/2 Cup of cheese, the chopped jalapeños, and bacon, mix into the potatoes. Scoop mashed potatoes back into the shells and place on a baking sheet.
  • Add remaining cheese ontop of the potatoes, place a couple jalapeño slices on each. Reduce the heat in the oven to 375˚F and bake for about 15 minutes, until the cheese is melted and has some color to it.
