Lemon Poppyseed Pancakes

Happy Saturday morning everyone! Not only is it the weekend and we get enjoy time off of work, it’s also time for….. Pancake of the Week! Woot woot. This time I am doing one of my wife’s all time favorites. I am throwing down and making some Lemon Poppyseed Pancakes. Yup I am leaving the ultra sweet world of dessert for breakfast this week for something light and fresh. This is one of those instances were you are trying something new but don’t have to worry about the outcome. Trust me guys if you make these they will be a total hit with everyone. So go ahead and give these a try, I know you will love them. When you do make sure to take a pic and post them to my Facebook page.

Lemon Poppyseed Pancakes Recipe

Total Time 15 minutes
Servings 4 Servings

Ingredients
  

  • 1-1/2 Cups Flour
  • 1-1/2 Cup Milk
  • 1 Tbsp. Sugar
  • 2 tsp. Baking Powder
  • 2 Tbsp. Butter Melted
  • 2 tsp. Lemon Zest
  • 1-1/2 tsp. Poppyseeds
  • 1/2 tsp. Baking Soda
  • 1 Egg
  • Salt

Instructions
 

  • In large bowl mix together flour, sugar, baking soda, baking powder, poppyseeds and salt.
  • In medium bowl whisk together milk, lemon zest, egg and butter. Pour wet ingredients into the dry and mix until combined.
  • Heat pan/skillet over medium heat and add 1/4 of batter at a time cooking on both sides until they become golden. About 3-4 minutes each side.
