Ingredients
  

Remoulade:

  • 1-1/2 Cups Mayonnaise
  • 2 Tbsp. Dijon
  • 1 Tbsp. Lemon Juice
  • 1 Tbsp. Hot Sauce
  • 1 Tbsp. Grainy Mustard
  • 2 tsp. Garlic Powder
  • 1 Tbsp. Capers Chopped
  • 2 tsp. Caper Juice
  • 2 tsp. Worcestershire
  • 2 tsp. Paprika
  • Salt
  • Pepper

Grinders:

  • 8 Andouille Sausages
  • 10 oz. Chorizo
  • 1 Cup Red Onion Sliced
  • 1 Cup Peperoccini Sliced
  • 1/2 Cup Green Onions Sliced

Instructions
 

  • 🥄 Whip Up the Remoulade – Toss all the remoulade ingredients into a bowl and give it a good mix until it’s smooth and creamy. Let it sit and do its thing while you get the rest of this beast of a sandwich ready—because trust me, the flavors only get better! 🔥
  • 🔥 Cook the Chorizo – Remove the casing from the chorizo, toss it into a skillet, and cook over medium heat. Use your spatula or ground meat chopper to break it down into fine crumbles. Once fully cooked, remove it from the skillet and set aside.
  • 🌭 Sear the Sausages – Split the sausage links lengthwise—but don’t cut all the way through! Add them to the same skillet and cook until golden brown and caramelized. Flip them split-side down and press them into the pan so they flatten slightly. If your sausages are already fully cooked, you just need to warm them through and get that nice sear.
  • 🥖 Toast the Rolls – Once the sausages are done, slit the French rolls and place them in the skillet to toast. Work in batches so each one gets a nice golden crust.
  • 🛠 Build Your Grinder – Place the toasted French rolls on a platter. Spread a little remoulade sauce on each side of the bun. Add the sausage links (split-side up), top with chorizo crumbles, then drizzle with more remoulade. Finish it off with red onions, peppers, and green onions for a fresh, zesty bite!
  • 🔥 Time to Eat! – Serve immediately and get ready for one seriously awesome sandwich!
