Happy Friday all! This recipe is another special request from the family. My son had seen this recipe for Mashed Potatoes Cheese Sticks and really wanted them. So I just had to make them for him lol. These are a super cool and easy little recipe that will have anyone saying wow when they try them. I mean come on they were good enough to get my son on camera lol. Mashed Potatoes Cheese Sticks Recipe
Ingredients
- 3 Large Russet Potatoes
- 1 Cheddar Cheese Block Sliced in Strips
- 1/2 Cup Sour Cream
- 1/4 Cup Green Onion Diced
- 1/4 Cup Bacon Chopped
- Salt
- Pepper
- 1 Cup Flour
- 2 Eggs Beaten
- 1 Cup Pank Breadcrumbs
Instructions
- Peel and cube your potatoes, then place in a large pot and cover with water. Bring to a boil and allow to go for about 20 minutes.
- Drain potatoes, then place in a large bowl with sour cream, green onion, bacon, salt and pepper to taste and mash together.
- Heat oil to 350˚.
- Scoop potatoes out in a ball and place cheese stick slices in the middle and form the potatoes around the cheese stick so it is completely covered.
- Place flour, egg, and panko in three separate shallow dishes.
- Coat sticks in the flour, then egg and panko. To make them extra crispy put them through the egg then panko a second time.
- Fry for about 2-3 minutes, until they are a golden brown.
