Mediterranean Chicken Kabobs

Ok on with the recipe lol. So while it is raining on and off I have been able to jump out to the grill a few times already (though I can’t set up to film until the weather gets better lol). Today’s recipe was one of those get out on the grill days but it was also a quick and easy chicken dinner recipe. I made some Mediterranean Chicken Kabobs. A simple and cool tasting kabob you can make for lunch or dinner. The ingredients aren’t exotic and you probably only need to pick up a couple things from the store you don’t already have. So when you do make this one make sure to take a picture and post them to my Facebook page.

Mediterranean Chicken Kabobs Recipe

Ingredients
  

Marinade:

  • 3 Garlic Cloves Minced
  • 1/2 Cup Olive Oil
  • 2 Tbsp. Lemon Juice
  • 2 tsp. Paprika
  • 1 tsp. Italian Seasoning
  • 1 tsp. Nutmeg
  • Salt

Kabobs:

  • 2 Chicken Breasts Chunked
  • 1 Onion Chunked
  • 1 Bell Pepper Chopped

Garlic Sauce:

  • 1 Cup Greek Yogurt Plain
  • 2 Garlic Cloves Minced
  • 1 Tbsp. Dill Chopped
  • 1 Tbsp. Lemon Juice
  • 1 Tbsp. Olive Oil
  • Salt
  • Pepper

Instructions
 

  • In a small bowl mix together all marinade ingredients.
  • In a large bowl put all cubed chicken, chunked bell pepper and onion. Pour marinade over chicken and vegetables.
  • Cover the bowl and put in the refrigerator for at least 30 minutes.
  • After marinade has had time to soak in put chicken, bell peppers, and onion onto your skewers.
  • Cook on your grill over medium heat for about 15-20 minutes turning every 5 minutes. Making sure chicken is cooked all the way through before pulling off of the grill.
  • While the chicken is grilling mix all of the garlic sauce ingredients together.
  • Serve and enjoy!
