I want to apologize for the late video, it has been one of those days. I accidentally deleted all the footage I filmed last weekend. So had to bump all my recipes up, then as I was editing today in order to get this video up my son had a blow out while driving so I had to get over there.. man it has been a DAY! lol but here it is I got a video up!! And what a video it is. I am taking Nachos and going completely next level with some Elotes/ Mexican Street Corn. Yup we are making some really cool Mexican Street Corn Loaded Nachos =) These are really great tasting and cool appetizer or part food everyone in your house! Mexican Street Corn Loaded Nachos Recipe
Ingredients
- 1 18 oz. Bag Corn Tortilla Chips
- 1 15 oz. Can Fire Roasted Corn Drained & rinsed
- 3 Cups Mozzarella Cheese Shredded
- 1/2 Cup Sour Cream
- 2 Tbsp. Mayonnaise
- 1/2 Lime's Juice
- 1 tsp. Chili Powder
- Chopped Cilantro
- 1/2 Cup Crumbled Cotija Cheese
Instructions
- Pre-heat your oven to 400˚.
- In a small bowl mix together the sour cream, mayonnaise, lime juice, and chili powder.
- Line a baking sheet with aluminum foil, spread your chips out across it. Next add your corn, then mozzarella cheese.
- Bake for 10 to 15 minutes until cheese is melted. Top with the sauce we made, sprinkle with cilantro and cotija chees
