Mofongo Stuffing Puerto Rican Fusion

So I decided I wanted to start doing some Puerto Rican fusion recipes. Puerto Rican food is a great cuisine most people just don’t know about at all, so I thought why not go ahead and make some fusion recipes! Here is my first one I decide to mix my Father’s favorite Thanksgiving recipe and his favorite Puerto Rican recipe, so I present Mofongo Stuffing/Dressing.

Mofongo Stuffing

Having fun mixing some Puerto Rican cuisine with Thanksgiving classics.

Ingredients
  

  • 1 Onion Chopped
  • 4 Cloves Garlic Chopped
  • 1/4 Cubanelle Peppers Chopped
  • 1/4 Cup Aji Dulce Peppers Chopped
  • 1 Aji Caballero Pepper Chopped
  • 2-3 Tomatoes Chopped
  • 1/2 Cup Cilantro Chopped
  • 2 Tbsp. Butter
  • 4 Green Plantains
  • 1 oz. Chicharones/Pork Rinds
