Pierogi Casserole

Happy Monday everyone! Is happy Monday a thing? lol, well here is a cool little dinner you guys can make to help with those Monday blues =) an AWESOME Pierogi Casserole!! The wife and I love pierogis, we really love the cheese and potato ones. So figured why not turn them into a family easy to serve dinner! Now this is just a base recipe, you can easily tweak this to the version of pierogis you like the most. We love.. LOVE to sauté a little red onion and ham with ours so I would top this base recipe with those to really ramp it up! What would you do to tweak this one? Pierogi Casserole Recipe

Total Time 1 hour 30 minutes

Ingredients
  

  • 10 Russet Potatoes
  • 16 oz. Cheddar Cheese Shredded
  • 2-1/2 Sticks Butter
  • 2 Onions Diced
  • 1 lb. Lasagna Noodles
  • Salt
  • Pepper

Instructions
 

  • Peel and Chop potatoes into about 1" chunks. Add potato chunks to a large pot and cover with water, heat water and bring it to a boil and allow to cook until potatoes are tender, about 35 minutes.
  • Cook lasagna noodles according to package directions.
  • In a pan or skillet melt down butter and sauté onions in the butter until they are soft.
  • Pre-heat oven to 350˚.
  • Drain potatoes, and mash. Pour in butter and onions, salt and pepper to taste and, and about 10 oz. of cheese mix until completely combined.
  • Place layer of cooked noodles in the bottom of a 9×13" baking dish. Alternate layers of potatoes, and noodles ending with noodles on top.
  • Cover with foil and bake for about 35 minutes, uncover add the remainder of the cheese and bake until cheese is melted.
