Usually I don’t do two back to back dessert recipes…… but one of the kids on my football team asked if I knew how to make a chocolate cake like Portillo’s because it was his favorite dessert period. Now if your from the Chicago area (or the couples places in the US that has one outside of Chicago) you know how awesome Portillo’s is as a whole. I mean everything they have there is great. Anyway I do actually know how to make a Portillo’s Chocolate Cake Recipe. So I figured why the heck not, let’s do a copycat recipe and make one of the kids on the team happy at the same time lol. So if you love a GREAT chocolate cake this is the recipe for you!

Portillo’s Chocolate Cake Recipe
Ingredients
- CAKE
- 2 Cups Flour
- 1/2 Cup Cocoa Powder
- 1-1/4 tsp. Baking Soda
- 1/2 teaspoon Baking Powder
- 1 tsp. Instant Coffee
- Salt
- 3 Eggs
- 1 Cup Mayonnaise
- 1 Cup Sugar
- 1 1/4 cup Water
- 1 tsp. Vanilla
- 1/2 Cup Chocolate Chips Optional
- FROSTING
- 1 Cup Butter softened
- 1/2 Cup Cocoa Powder
- 5 Cups Powdered Sugar
- 1 tsp. Vanilla
- 3 Tbsp. Milk if needed to for consistency
Instructions
CAKE
- Preheat the oven to 350F. Butter 2 round cake pans (9-inch ones) and line with parchment paper.
- Mix together the flour, cocoa powder, baking soda, baking powder, coffee and salt in a bowl. Set aside.
- Add the eggs, mayonnaise, sugar, water and vanilla into the flour mixture. Stir until well-blended but do not overmix.
- Fold in the chocolate chips. Transfer the batter to the prepared pans.
- Bake in the preheated oven for 20-23 minutes or until a toothpick inserted in the center comes out clean. Oven temperatures vary so adjust the time accordingly.
- Cool the cakes in the pans for 10 minutes and then transfer to a wire rack. Cool the cakes completely before adding the chocolate filling and coating with the frosting.
FROSTING
- Whip butter and cocoa together until smooth in large bowl. Stir in vanilla and powdered sugar. Slowly stream in milk until frosting reaches desired consistency. Scrape sides and whip again until light, fluffy and smooth, 1-2 minutes.
