Pumpkin Cobbler

I love doing fall recipes, and every fall I love to pull out some great pumpkin recipes. This is another one of those great pumpkins recipe. I mean why just do plain pumpkin pie recipes in the fall right? So let’s bump this up a notch here. So with that let’s throw out there a really great Pumpkin Cobbler Recipe. This is an easy yet freaking awesome recipe. There is not too much to this one, but it is a spectacular dessert recipe that will knock the socks off of any pumpkin dessert lover. So go ahead and give this one a try I know you guys wont regret it!

Pumpkin Cobbler Recipe

Total Time 1 hour

Ingredients
  

FILLING

  • 1-1/4 Cups Flour
  • 2 tsp. Baking Powder
  • Salt
  • 3/4 Cup Sugar
  • 1 tsp. Cinnamon
  • 1/2 tsp. Nutmeg
  • 1/4 tsp. Ground Cloves
  • 1/4 tsp. Ginger
  • 1 Cup Pumpkin Puree
  • 1/4 Cup Olive Oil
  • 1 tsp. Vanilla

TOPPING

  • 1 Cup Brown Sugar
  • 1/2 tsp. Cinnamon
  • 1/3 Cup Pecans or Walnuts Chopped
  • 1-1/2 Cup Hot Water

Instructions
 

  • Whisk together the flour, baking powder, salt, sugar, and spices.
  • Add the pumpkin, oil, and vanilla. Stir just till blended. Spread into a well greased round casserole dish.
  • Mix together the brown sugar, cinnamon, and walnuts in a small bowl.
  • Sprinkle evenly over the batter. Pour hot water over the top.
  • Bake at 350° for about 50-60 minutes. The cake will rise to the top, it should be cooked through, but there will be sauce at the bottom.
