Here we are moving through the fall! Tonight is the big rivalry game for my son’s high school, the wind is getting chilly, leaves are changing color. That means it’s time to start busting out the PUMPKIN!! Yup we are doing a cool pumpkin spice recipe. To be specific I am making a Pumpkin Spice Bundt Cake. If you guys get that fall pumpkin spice craving well this is your fix lol. So go ahead give this one a try I know you will totally fall in love with it. Pumpkin Spice Bundt Cake Recipe
Ingredients
Cake:
- 4 Eggs
- 15 oz. Can Pumpkin
- 2 Cups Flour
- 2 Cups Sugar
- 1 Cup Oil
- 2 tsp. Cinnamon
- 2 tsp. Baking Soda
- 1 tsp. Baking Powder
- Salt
Glaze:
- 1-3/4 Cups Powdered Sugar
- 1/2 Cup Brown Sugar
- 3 Tbsp. Water
- 2 Tbsp. Butter
- 1 Tbsp. Dark Corn Syrup
Instructions
- Pre-heat your oven to 350˚.
- In a medium bowl cream the oil, eggs, and sugar until fluffy.
- In another bowl whisk remaining dry ingredients together. Pour egg mixture and pumpkin into the dry ingredients and mix until completely combined.
- Pour into a greased bundt pan and bake for about 1 hour.
- Add all glaze ingredients (except powdered sugar) to a small sauce pan. Bring to a boil over medium heat, reduce heat and allow to simmer for about a minute.
- Remove from heat and add powdered sugar whisk together and allow to cool for about 5 minutes before pouring over the cake.
