Hey guys happy Monday. Well I had a super long weekend. Anthony had FroSoph Regionals for wrestling. He took first place at 152 lb. so this up coming weekend will be sectionals, and it keeps going lol. Anyway I decided to make some thing really quick and easy. That also fits St. Patrick’s Day, we are making some Reuben Bites. A nice easy and quick recipe to match the upcoming holiday. So go ahead make this serve a nice Irish beer and have a good time. Reuben Bites Recipe
Ingredients
- 24 Wonton Wrappers
- 1/2 lb. Deli Corned Beef Chopped
- 1/2 Cup Sauerkraut drained
- 1/4 Cup Cream Cheese Softened
- 1/2 Cup Gouda Cheese Chopped
- 8 Swiss Cheese Slices Chopped
- 1/2 Cup Thousand Island Dressing
Instructions
- Preheat your oven to 375˚.
- Place two wonton wrappers in each cup of a muffin tin.
- In a medium bowl mix together corned beef, sauerkraut, gouda and cream Cheese.
- Place a spoon chopped Swiss evenly between cups, then evenly spoon the corned beef mixture into each.
- Back for about 10 to 15 minutes, until wontons have browned and cheese is melted.
- Drizzle with Thousand Island and serve.
