Reuben Quesadillas – A St. Paddy’s Day Twist on a Classic!
Ingredients
1000 Island Dressing:
- 3/4 Cups Mayonnaise
- 3 Tbsp. Ketchup
- 1 Tbsp. Sweet Pickle Relish
- 1 tsp. Paprika
- 1 tsp. Garlic Powder
- Salt
- Pepper
Quesadillas:
- 12 8 in. Flour Toritillas
- 1 lb. Corned Beef
- 12 Slices Swiss Cheese
- 1 Cup Sauerkraut
Instructions
- 🥣 Mix Up That Dipping Sauce – In a small bowl, stir together mayonnaise, ketchup, relish, paprika, garlic powder, salt, and pepper. Boom! You’ve got a killer 1000 Island sauce. Set it aside and keep it cool.
- 🌮 Build Your Quesadillas – Lay out 6 flour tortillas and evenly top them with Swiss cheese, corned beef, sauerkraut, and another slice of Swiss cheese before placing the remaining 6 tortillas on top.
- 🔥 Get That Sizzle Going – Heat a large skillet over medium-high heat and add ½ tablespoon of oil. Fry each quesadilla on both sides until they’re golden brown and the cheese is melty. Keep going until all your quesadillas are crispy perfection.
- 🔪 Slice & Serve – Cut each quesadilla into wedges and serve hot with that homemade 1000 Island dipping sauce.
