Simple Bacon Blue Cheese Corn Salad

We made it to another Friday, heck man the last Friday of June 2021! Wow, this year is flying by already. With as hectic as summer is for me with sports camps, running around, vacation, etc. I am working on pumping out even simpler recipes than normal. So today I am making a quick and simple BBQ side you can enjoy next weekend for the 4th of July. We make a Simple Bacon Blue Cheese Corn Salad. Other than cooking the bacon this recipe takes no time at all and will be a real crowd-pleaser. When I made this we had a couple of blue cheese haters in our group but there is little enough of it in this one it doesn’t overpower everything and they didn’t even know they were eating it. Simple Bacon Blue Cheese Corn Salad

Ingredients
  

  • 2 15 oz. Cans Fire Roasted Corn, Drained
  • 5 Green Onions Chopped
  • 1 Jalapeño Seeded and Diced
  • 5 Bacon Slices Cooked and Crumbled
  • 1/4 tap. Liquid Smoke
  • 1/4 tsp. Paprika
  • 1/4 tsp. Onion Powder
  • 1/4 Cup Mayonnaise
  • 1/4 Cup Blue Cheese
  • 2 Tbsp. Cilantro
  • Salt

Instructions
 

  • In a large bowl combine all of the ingredients, refrigerate for about 20 minutes and serve.
